Hidalgo Palo Cortado Wellington VOS is an exceptionally complex and elegant fortified wine from Jerez. "VOS" stands for "Vinum Optimum Signatum," indicating that it is a Sherry that has matured for at least 20 years in oak barrels. This Palo Cortado combines the characteristics of Amontillado and Oloroso, with aromas of dried fruits, spices, and wood. On the palate, it is dry, rich, and balanced, with a long and persistent finish. This Palo Cortado is a very special wine, due to its aging process, since it begins its life under a layer of yeast called "flor" like Amontillados, but at some point this "flor" is lost and the wine goes on to have an oxidative aging like Olorosos. Which ends up having characteristics of both types of sherry.
